In a bowl, whisk together the flour, salt, baking soda, and baking powder.
In a separate bowl, whisk together the greek yogurt, maple syrup, eggs, vanilla, and oil.
Add the dry ingredients to the wet, and mix together until combined.
Add toppings of choice and mix to combine.
Use a mini muffin pan and spray with cooking oil spray (avocado, coconut, etc.) and divide batter using a tablespoon portion.
Bake the muffins at 350F 15-18 minutes.
Store in the fridge for up to a week!
