Cinnamon Roll Cookies
  1. In a large bowl, cream together the butter and sugar until light and fluffy (about 4–5 minutes).

  2. Add the egg and vanilla extract. Mix until fully combined.

  3. Mix in the flour, salt, baking powder, and cinnamon until a soft dough forms.

  4. Place the dough between two sheets of plastic wrap or parchment paper and roll into a rectangle.

  5. In a small bowl, mix together the softened butter, brown sugar, and cinnamon for the filling.

  6. Spread the cinnamon mixture evenly over the dough.

  7. Roll the dough tightly into a log.

  8. Wrap and refrigerate for at least 3 hours, preferably overnight.

  9. Preheat oven to 350°F (175°C).

  10. Line a baking sheet with parchment paper.

  11. Slice the dough into even cookies and place on the prepared baking sheet.

  12. Bake for 15–20 minutes, or until the edges are lightly golden.

  13. Let cool completely.

  14. Whisk together frosting ingredients and drizzle over cooled cookies.
