Use a vegetable peeler to shave the tofu into thin deli-style slices.
Add the stock, soy sauce, nutritional yeast and spices to a pan and bring to a gentle simmer.
Add the tofu and cook on slow until the liquid is absorbed then spread the tofu onto a tray in a loose layer and bake at 200°C / 180°C fan, just until the edges dry out slightly and get a little crisp.
