Preheat oven to 425°F.
To a bowl, add the chicken, olive oil, adobo paste, garlic, chili powder, coriander, oregano, onion powder, cumin, salt, and honey. Toss together.
Place bell peppers and marinated chicken on a sheet pan.
Pop in the oven to bake for 20 minutes or until the chicken is cooked through and has a sear.
Take out of the oven and optional, add cheese on top and let it melt in the oven for 1 to 2 more minutes.
Garnish with chopped cilantro and serve warm with tortillas, sour cream, and limes!
