Apple And Pecan Crumble Cake
  1. Preheat oven to 180ºC (160ºC fan). Grease and line a 21cm x 24cm tin.

  2. For the crumble: Combine flour, cinnamon and brown sugar in a bowl. Rub in the butter and then stir through the pecans and set aside.

  3. For the cake: Sift the flour, bicarb soda, cinnamon and salt into a large mixing bowl.

  4. Place the diced apples in another bowl and stir through about 2 tablespoons of the flour mixture then add the pecans and set aside.

  5. Using a whisk, combine the eggs, vanilla and oil and pour over the flour mixture and stir to combine.

  6. Add the apples and stir again to mix well.

  7. Spoon the mixture into the prepared tin and top with the crumble. Very gently pat the surface with your hand.

  8. Bake in the oven for about 1 hour or until cooked when tested with a skewer.

  9. Remove from the oven but leave in the tin for at least 20 minutes. The cake is very delicate until it is at room temperature and, if you choose to serve it warm, it is best to cut it out of the tin.

  10. Serve with a dusting of icing sugar and whipped cream.
