Prepare Zucchini: Cut zucchini into thin strips. Place in a strainer and sprinkle with coarse sea salt. Let sit for 15 minutes to drain water. Pat dry with paper towels.
Coat & Fry: Coat the dried zucchini strips in a blend of 00 flour and semolina flour. Fry in hot oil over medium/high heat for 1-2 minutes until crispy and golden.
Make Garlic Sauce: Combine mayonnaise, lemon juice, crushed garlic, salt, and pepper in a bowl. Mix well.
Serve: Top fried zucchini with fresh mint. Serve hot with the creamy garlic dip on the side.
