Start by slicing your gorgeous Sun Gold tomatoes in half
In a large pot or Dutch oven, add a nice drizzle of olive oil
Sauté a finely minced shallot
Add a few cloves of garlic
Add in the sun dried tomatoes and a heavy hand of salt
Add in some Calabrian chili peppers
Add in some white wine and let that reduce a bit
Partially cover while you cook your pasta
Once the pasta is done and the tomatoes have reduced, remove the garlic and smash it with a knife to make a paste
Add the garlic paste back into the tomatoes
Add in some cold butter and give that a stir
Add in the cooked pasta, along with a little bit more butter and some Parmesan cheese
Add in a little splash of pasta water to help emulsify
Adjust the amount of pasta water, Parmesan, and butter to get your desired consistency
Finish with some freshly torn basil and taste for seasonings
