Preheat oven to 180°C / 350°F and line a square baking tin
In a food processor or blender, combine 1 cup oats, almonds, flaxseeds, pumpkin seeds, protein powder, and salt. Blend until combined
Add dates, maple syrup, vanilla, blueberries and remaining 1 cup oats. Blend until combined and sticking together, then press mixture into tin
Bake for 20-25 minutes. Cool completely before cutting into bars or squares
Alternative method: If using NutriBullet, blend dry ingredients first, then wet ingredients (berries, maple syrup, vanilla) separately and mix together in bowl
Freeze or store in airtight container in fridge. Can be eaten straight from the freezer
