Roasted Cajun Butter Carrots
  1. Preheat the oven to 375˚F.

  2. Toss the carrots with olive oil, salt, and pepper and transfer them to a sheet pan or baking dish.

  3. Roast the carrots for 25 minutes to 30 minutes, or until fork tender, stirring halfway through cooking.

  4. In the meantime, melt the butter in a large skillet set over medium-high heat. Stir in the garlic and cook for 20 seconds or until fragrant. Whisk in the brown sugar until combined. Whisk in dried oregano, paprika, cajun seasoning blend, salt, and pepper.

  5. Remove from heat.

  6. Add the roasted carrots to the skillet and gently toss to combine with the butter sauce. Taste for salt and pepper and adjust accordingly.

  7. Garnish with green onions and parsley and serve.
