Boil the mini potatoes in salted water for 10–15 mins until soft
Add to a muffin tin, smash them down, season, and spray with oil
Bake at 220°C for 12–15 mins until crispy
Blend eggs, cottage cheese, salt & pepper
Mix in your toppings
Pour over the potatoes
Bake again for around 20 mins until set
Let them cool slightly before serving
