For the lamb: Mix Dijon mustard, diced shallot, minced garlic, chopped parsley, onion powder, Worcestershire sauce, kosher salt, black pepper, and olive oil until the lamb is evenly coated. Cover and marinate in the fridge for at least 2 hours.
For the herb pesto: Add parsley, basil, mint, toasted pine nuts, Parmesan, and garlic cloves to a food processor. Pulse, then slowly stream in the extra-virgin olive oil until you have a smooth, spoonable pesto. Add a little more oil if needed. Season with salt and pepper to taste.
Take the lamb out of the fridge about 30 minutes before cooking.
Heat a skillet over medium-high heat. Add avocado oil.
When the oil is shimmering, add the lamb chops.
Sear for about 3 minutes per side, or until they reach your preferred doneness.
Let the lamb rest for 5 minutes.
Serve the lamb chops with the herb pesto, edible flowers, and plate.
