Preheat oven to 375°F
In a small food processor, blend the onion, bell pepper and garlic until liquidy
Transfer mixture to a bowl and use a paper towel to remove excess moisture
Add the beef to a large bowl along with the onion/bell pepper/garlic mixture, parsley, and seasonings
Mix very well until incorporated using your hands
Spread the beef mixture evenly in a flat layer on a greased quarter sheet pan
Make cuts horizontally and vertically like restaurant kebabs
Bake for 20 minutes, then broil for 4-5 minutes until golden on top
Remove from oven and cut beef along the horizontal lines to separate the kebabs
Chop the salad vegetables and toss with vinegar, avocado oil, sumac and salt
Mix greek yogurt with grated cucumber (liquid pressed out), lemon juice and salt for yogurt sauce
On a lavash, spread yogurt mixture, add 2-3 kebabs and salad, then fold up and serve
