Mix pork, garlic, ginger, spring onion, cooking wine, soy sauce & white pepper in a bowl.
Lay out dumpling wrappers and spoon about 1 tbsp of filling into the center. Flatten gently to spread it out thin.
Heat a bit of oil over medium heat. Place pork side down and cook 1–2 min until golden brown.
Flip, cook another 1–2 min, then fold in half (like a taco). Pan-fry until crispy.
Drizzle with sauce, sprinkle sesame & spring onion and enjoy!
