Marinate steak with soy sauce, oyster sauce, cornstarch, and sesame oil. Let sit 10–15 minutes.
Cook noodles until al dente. Drain and rinse if needed.
Sear marinated steak in hot oil for 1–2 minutes per side. Set aside.
In the same pan, melt butter with remaining oil. Add garlic and ginger. Sauté until fragrant.
Add soy sauce, hoisin, honey, broth, and red pepper flakes. Simmer to thicken.
Return steak to pan. Add noodles. Toss to coat evenly.
Serve hot with sesame seeds, green onions, red chili, or cilantro.
