  1. Wash and cut the baby potatoes into quarters. They should be roughly the same size cubes. Put them in a large pot add 2 teaspoons of salt cover with cold water and cook on the hob until soft when pierced with a knife. Strain off the boiling water, then rinse in cold water to cool down, strain again. Divide into 3 bowls.

  2. To make the Bacon & Mayo salad, add the finely sliced red onion, chopped bacon, mayo, mustard, black pepper and mix well. Taste and add salt if you wish.

  3. To make the Fresh Tomato & Herb, add the cherry tomatoes, herbs, lemon zest, olive oil, salt and pepper mix well.

  4. To make the Pesto & Parmesan, to the third bowl of potatoes stir in the pesto and grated parmesan and black pepper. Taste and add salt if you wish.
