Add the strawberries, lemon juice, honey, and optional Elderberry syrup to a food processor and blend until smooth.
Add the water and blend again until well combined.
For every 1 cup of the fruit mixture, add 1 teaspoon of agar agar.
Bring the mixture to a boil, whisking constantly.
Reduce the heat and whisk for another 2 minutes.
Pour the mixture into silicone molds and let set for 30 minutes.
For a chewier texture, let the gummies dry out for a few days.
