Add cubed chicken breast to slow cooker
Add minced garlic, spice blend (crushed red pepper, garlic powder, onion powder, black pepper, cayenne), parmigiano reggiano, and butter to slow cooker
Slow cook on High for 2-3 hours OR Low for 5-6 hours
While chicken cooks, roast red bell peppers and garlic cloves (wrapped in foil) at 450°F for 30-50 minutes until peppers are softened and skin peels easily
Blend roasted red peppers, roasted garlic, cottage cheese, parmigiano reggiano, milk, and red chili flakes until completely smooth
Once chicken is done, shred it with a fork
Add half-cooked pasta and approximately 1 cup reserved pasta water to slow cooker
Pour sauce over chicken and pasta mixture and stir well
Cover and cook for 15-20 minutes
Garnish with chopped parsley and serve
