  1. Preheat oven to 180°C

  2. Cook for at least 90 mins in baking paper and then foil over the top - cook until fork tender then remove the covers

  3. Pour over syrup and bake again for a further 15 minutes or until the top has caramelised and potatoes are cooked

  4. Stand for 10 minutes it needs to rest

  5. Serve with more thyme and salt
