Tear your mushrooms into strips then add them to a bowl with the cornstarch then give everything a good mix to coat
Fry in a generous amount of oil until golden & crispy then set aside on some kitchen towel to drain any excess oil
Add to a bowl along with the truffle oil & a good pinch of salt then toss to coat evenly
For the pesto: add all the ingredients to a blender & blitz until creamy but still retaining some texture
For the mayo: add everything to a bowl & mix to combine
Toast your bread of choice then layer with truffle garlic mayo, rocket, crispy mushrooms & pesto & dig in !
