Mix together the dough. Combine the peanut butter, 1 cup granulated sugar, 1 egg, and 1 tsp vanilla extract in a medium mixing bowl. Stir until smooth and combined.
Cover the dough in plastic wrap and place in the fridge for 1-2 hours to firm up.
Unwrap 9-10 chocolate Hershey kisses. This recipe makes about 9-10 cookies. Set them aside.
Once the dough has chilled, preheat the oven to 350° F. Line a baking sheet with parchment paper.
Scoop the chilled dough into 2 tablespoons dough balls. Roll the dough balls in the ½ cup of granulated sugar. Place on a baking sheet.
Bake at 350° for 9-11 minutes. Immediately after removing from the oven press the kisses into the middle of the cookies.
Allow them to cool for 10-15 minutes. Enjoy!
