Great for grab and go breakfasts for my kids. If you can’t tell, I’m a big fan of handheld foods.
Ingredients
Heat the oven to 375°F and line a sheet pan with parchment.
Whisk the eggs with the milk, salt and pepper.
Spray a skillet with oil and softly scramble the eggs. Remove them while still slightly underdone.
Let the eggs cool, then combine them with the ham and cheddar.
Roll out both sheets of puff pastry and cut each into 8 rectangles. Place filling in each one, and top with another. Crimp with a fork.
Arrange on the sheet pan, score the tops, and lightly spray the tops with oil.
Bake for 15-19 minutes, until deeply golden and cooked through.
Instructions
To freeze: Cool completely, wrap individually and freeze.
To reheat: Microwave for 60–90 seconds, then air-fry at 350°F for 3–4 minutes to bring the crust back.
