Cheesy Enchilada Beef Tortellini Skillet
  1. Heat olive oil in a large skillet over medium heat.

  2. Add ground beef and cook until browned, about 5–6 minutes. Drain excess fat.

  3. Stir in onion and garlic; sauté 2–3 minutes until softened.

  4. Add chili powder and cumin; cook 1 minute to bloom spices.

  5. Pour in enchilada sauce and diced tomatoes. Stir to combine.

  6. Add cheese tortellini and stir to coat. Cover and simmer for 8–10 minutes until tortellini is tender.

  7. Sprinkle both cheeses over the top. Cover for 2–3 minutes until melted.

  8. Garnish and serve hot.
