Preheat oven to 375 degrees.
Place spinach in a large pot or skillet and sprinkle with about 1 tablespoon water. Cook over high heat until wilted and bright green, then chill quickly.
Heat oil in a small skillet, sauté garlic and parsley until fragrant.
In an electric mixer, blend feta, Monterey jack, and cream cheese until smooth. Add garlic mixture, chopped spinach, and pepper.
Transfer mixture to an ovenproof dish or ramekins, sprinkle with parmesan cheese.
Bake for 20 minutes or until golden. If needed, broil for 1-2 minutes to brown the top.
