Rhubarb Crisp
  1. Preheat your oven to 350°F (175°C).

  2. In a large mixing bowl, combine the chopped rhubarb, granulated sugar, ¼ cup flour, lemon juice, and vanilla extract. Stir until the rhubarb is well coated, then transfer the mixture into a greased 8x8 inch baking dish.

  3. In another bowl, mix together the rolled oats, ½ cup flour, brown sugar, and ground cinnamon. Pour in the melted butter and stir until the mixture is crumbly.

  4. Spread the oat mixture evenly over the rhubarb in the baking dish.
