Chili Peanut Crispy Rice Salad With Honey Soy Salmon Bites
  1. Bake jasmine rice at 400°F for 40 minutes, stirring every 10 minutes until brown and crispy

  2. Toss crispy rice with 2 tbsp white vinegar, 1 tsp sesame oil, 1 tbsp sugar, and ¼ cup fried chili in oil

  3. Marinate salmon cubes in soy sauce, honey, sesame oil, onion powder, garlic powder, salt, and pepper for at least 10 minutes

  4. Air fry salmon at 400°F for 10 minutes

  5. Blend dressing ingredients: ⅓ cup soy sauce, honey, peanut butter, fried chili in oil, white vinegar, onion powder, and garlic powder

  6. Combine diced cucumbers, edamame, green onion, cilantro, and avocado in a large bowl

  7. Toss vegetables with crispy rice and creamy chili peanut dressing

  8. Top with salmon bites, peanuts, and additional cilantro
