Add the plant-based milk, oats, chia seeds, cocoa powder, maple syrup, vanilla, and salt to a high-powered blender.
Blend on high for about 1 minute, or until mostly smooth. The mixture will be thin—this is expected.
Divide the blended oats evenly between 4 small jars or containers.
Spoon the melted dark chocolate over the top of each jar.
Seal and refrigerate for at least 1½ hours, or overnight, until the oats are thick and the chocolate topping is firm.
Store in the fridge for up to 5 days. Enjoy straight from the jar!
