Greek Turkey Gyros With Tzatziki Sauce
  1. Add the onion and the garlic to a food processor. Using the 'pulse' setting, process until finely chopped but not pureed.

  2. Add the turkey meat, marjoram, rosemary, thyme, salt and pepper. Process until thoroughly mixed and the turkey has a paste like consistency, about 3 minutes.

  3. Scoop the turkey mixture out onto a piece of plastic wrap. Using a rubber spatula, form the turkey into a loaf approximately 6 inches long and 1 - 1½ inches high by 4 inches wide. Wrap tightly in plastic wrap and refrigerate for 1 hour (and up to overnight) OR place in the freezer for 10 minutes.

  4. Pre heat the oven to 300 degrees if proceeding straight to cooking the turkey.

  5. Cook the turkey for approximately 30 - 40 minutes until the turkey reaches an internal temperature of 165 degrees.

  6. While the turkey is cooking, make the tzatziki sauce and prepare the lettuce, tomatoes, cucumbers and onions.

  7. Remove from the oven and cool. Slice into ¼ inch thick slices.

  8. Place on a sheet pan and brush with olive oil. Broil for 3 - 5 minutes or until the edges are crispy.

  9. Turn the slices, brush with olive oil and broil for another 3 - 5 minutes.

  10. Divide the slices evenly between 4 pita breads and top with lettuce, tomatoes, onions and cucumbers and drizzle with tzatziki sauce.
