Preheat the oven to 350°F, and line two baking sheets with parchment paper or a silpat (silicone baking mat).
Add 15.25 ounces strawberry cake mix to a large bowl.
In a smaller bowl, whisk 2 large eggs together, then add ⅓ cup vegetable oil and whisk until well combined.
Add the egg/oil mixture to the cake mix and combine until a dough forms. The dough will be soft.
Fold in 1 cup white chocolate chips, leaving a few for decorating the cookies after baking.
Using a small cookie scoop, scoop the batter from the mixing bowl onto the prepared baking sheets, spacing them evenly apart.
Bake in the preheated oven for 8-10 minutes. The edges will be lightly brown, and the cookies will be soft when you remove them.
Add the extra chocolate chips to the tops of the cookies, pressing them into the cookies lightly.
Let the cookies cool on the baking sheet for 5 minutes, then remove to wire racks to cool completely.
