Add a bit of olive oil to a large pot.
Cook zucchini, carrot and garlic until tender.
Add to a high powder blender along with cottage cheese.
Blend until smooth.
In the same pot, cook ground beef until browned.
Drain off any fat.
Stir in marinara sauce.
Add blended cottage cheese and vegetable mixture.
Stir until combined.
Cook for a few minutes to allow flavors to combine.
Season to taste.
Serve over cooked pasta along with a sprinkle of parmesan cheese, if desired.
