Preheat your oven to its highest setting (typically 550 F) and place a baking stone or upside down sheet tray in the oven while it preheats. You want it to be in there for at least 15 minutes before you bake this bread.
Stir together the za’atar spice and the olive oil, it should be almost like a paste.
Stretch your dough into a roughly 8-10 inch circle of even thickness. Spread the spiced olive oil mixture all over the dough then transfer the dough into the oven.
Cook for 10-12 minutes, until the dough is golden brown and crisped. Let cook slightly and serve.
