Apple Loaf Cake
  1. Preheat the oven to 160 degrees celsius.

  2. Mix the flaxseed with the water and put it to one side to allow to thicken.

  3. Combine the flour, ground almonds, spices, baking powder, bicarbonate of soda, and a pinch of salt in a mixing bowl.

  4. Add 6 tbsp apple sauce, cashew butter, maple syrup, coconut oil, and almond milk to a blender and blend into a smooth mixture.

  5. Pour this liquid mixture into the mixing bowl with the dry ingredients, along with the now thickened flaxseed mixture. Mix well.

  6. Slowly add the water, tablespoon by tablespoon until you reach a cake mixture consistency.

  7. Line a loaf tin with greaseproof paper and pour the cake mixture into it.

  8. Spread the remaining apple puree over the top of the cake batter.

  9. Place in the oven to bake for around 30 minutes. You may need to cover the cake with tin foil at around 20 minutes to avoid the top burning.

  10. Allow the cake to set and cool for at least 20 minutes before removing from the cake tin, cutting and digging in!
