In a large bowl, whisk together the olive oil, maple syrup, lemon juice, eggs, lemon zest, and vanilla.
Add in the rest of the ingredients, except for the powdered monk fruit if using.
Pour batter into a parchment paper lined or greased cake pan (I used a 7” one) and bake at 350°F for 30-35 min or until a toothpick comes out dry.
Let the cake cool before sifting the powdered monk fruit on top.
Cut into slices and enjoy!
