Gluten Free Banana Chocolate Chip Muffins
  1. Preheat your oven to 375°F.

  2. Melt down the butter and whisk it together with the brown sugar.

  3. Add the egg, vanilla extract, and milk to the bowl and whisk until combined.

  4. Mix in the baking powder and half of the flour until combined without any lumps, then mix in the remaining flour.

  5. Once the batter is smooth and lump-free, mash the 3 bananas in a separate bowl before mixing them into the batter.

  6. In a separate bowl, mix the gluten free flour, baking powder, baking soda and salt.

  7. Place the muffin cups in a muffin tin and spray the inside of each cup with cooking spray before filling them with batter (fill to just under the top of each cup).

  8. Add your chocolate chips to the top of the filled muffin cups, and press the chocolate chips in until just covered.

  9. Bake for 20 minutes until golden brown on top (to be sure they're done stick a toothpick into the center of one of the muffins, if the pick pulls out some wet batter, put them back in for a couple minutes and repeat).

  10. Let cool for 10-15 minutes before serving.
