Single Serve Chicken Pho
  1. Prepare the aromatics by cutting onion, spring onion, and ginger slices

  2. Add bone in chicken pieces, onion, ginger, star anise, cinnamon stick, and coriander seeds to a pot with water

  3. Add chicken stock cube to the pot

  4. Bring to a boil and simmer until chicken is cooked through

  5. Add rock sugar or white sugar to taste

  6. Season with fish sauce to taste

  7. Squeeze lime juice into the broth

  8. Serve in a bowl with hoisin sauce, sriracha, lime, coriander, spring onion, and chilli on the side
