Prepare the aromatics by cutting onion, spring onion, and ginger slices
Add bone in chicken pieces, onion, ginger, star anise, cinnamon stick, and coriander seeds to a pot with water
Add chicken stock cube to the pot
Bring to a boil and simmer until chicken is cooked through
Add rock sugar or white sugar to taste
Season with fish sauce to taste
Squeeze lime juice into the broth
Serve in a bowl with hoisin sauce, sriracha, lime, coriander, spring onion, and chilli on the side
