Quick pickle half of a red onion with lemon juice and a pinch of salt.
Mash the beans, then mix with red onion, walnuts, parsley, tapenade, soy sauce, cumin, breadcrumbs, salt, pepper and a drizzle of oil.
Shape into 16 balls, place on a lined tray and bake at 180C fan / 400F for 25 mins, turning halfway.
Mix parsley, garlic, lemon zest, lemon juice and olive oil to make a dressing.
Serve with hummus, flatbread, cucumber, pickled onion and spoon over the dressing.
