In a large wok or skillet, heat oil over medium high heat.
Sauté shallot and garlic for a couple of minutes, or until shallots are golden brown.
Add bok choy to the pan and sauté for a minute.
Stir in soy sauce, sesame oil, chili oil and cook for another 3-4 minutes or until tender to your liking.
Serve immediately with more chili oil.
