Season 1.5 lbs chicken with olive oil, garlic powder, onion powder, paprika, cumin, turmeric, cinnamon, salt, yogurt, and lemon juice. Mix well and marinate for 2-3 hours if possible.
Bake, air fry, or sear the chicken and finish in the oven at 400 degrees for 37 to 40 minutes until cooked through. Let rest before slicing or dicing.
While chicken cooks, prepare the salad base by combining shredded romaine lettuce, finely chopped dill pickles, and chopped parsley.
Make pickled onions by combining finely diced red onion with lemon juice, salt, and sumac. Mix a couple times over 5 minutes.
Prepare yogurt sauce by processing Greek yogurt, mayo, lemon juice, garlic cloves, olive oil, smoked paprika, cumin, and salt until smooth.
Combine cooked chicken with salad base and pickled onions. Pour yogurt sauce over everything and toss well.
Serve over bread or vessel of choice. Finish with lemon wedges, crumbled feta, and extra herbs.
