First make your sauce. Coat 7 cloves minced garlic with 1-2 TBSP rice flour and then fry in ¼ cup oil. TIP: as soon as you start to see your garlic turn color, turn off the heat but continue to stir so it does not burn. Then strain the garlic from the oil Set the garlic aside
Using the same oil you cooked your garlic, add another 2 TBSP oil and cook thinly sliced shallots until you see color.
Once you see color, add all of your ingredients listed under COMBINATION ZAUSS. Bring this to a boil, reduce heat to simmer and simmer for 2-5 minutes.
After 2-5 mins, turn off heat and add minced garlic back in. Combine well. Your COMBINATION ZAUSS is now done.
Now we need to make our GROUND MEAT TOPPING: heat up some oil and saute shallots and garlic til fragrant.
Then add ground meat of choice and cook until 50% of the way cooked.
Then add 2-3 TBSP of your COMBINATION ZAUSS. Combine well.
Then add garlic chili paste— if you are using. Mix this well, turn off heat and then add scallion.
Now all you have to do is assemble your bowl with your noodles, veggies, topping of choice and COMBINATION ZAUSS
