Heat the olive oil in a skillet over medium high heat.
Season the pork chops with salt and pepper on both sides, and add to the heated skillet. Sear the pork chops well on both sides and remove.
Reduce the heat in the skillet to medium, and add the butter and garlic. Saute for 30 seconds.
Whisk in the heavy whipping cream, chicken broth, dried parsley flakes, Italian seasoning, mustard powder and more salt and pepper to taste if desired.
Continue to cook the sauce until it begins to thicken.
Stir in the parmesan cheese, and add the meat back to the skillet.
Cover and saute until the pork chops are cooked through.
Spoon the sauce over the pork chops and serve.
