Preheat oven to 350°F
Get a 12 cupcake pan And Divide ground sausage meat into 12 cupcake tins. Your goal here is to make a little container out of the meat itself so you’ll push in in the middle and you don’t want to be too thick.
In a separate bowl mixed together, eggs, and cottage cheese. It’s at this point you can add anything else you want to the mixture.
Spoon in egg mixture to the meat in the cupcake tins. The eggs mixture will expand, so try not to overfill any of the containers. Spoon things over to different ones if some get too tall.
On top sprinkle some cheese of your choice. Cheddar is a good one. Also top the mixture with berbere and chives.
Cook for about 30 minutes
