Egg Fried Rice (蛋炒饭)
  1. Heat up your wok on medium heat with a ladle of veg oil, swirl the oil around the wok, then drain the oil and add 2 tbsp veg oil

  2. Add the beaten egg, wait 10 seconds then lightly scramble and add sesame oil

  3. Add your rice, use a ladle or spatula to separate the rice into smaller pieces

  4. Add the remaining seasonings and fry for 3-5 minutes depending on how high your heat is, mixing well so every grain has been incorporated

  5. Serve with spring onions, crispy shallots and chilli oil
