Heat up your wok on medium heat with a ladle of veg oil, swirl the oil around the wok, then drain the oil and add 2 tbsp veg oil
Add the beaten egg, wait 10 seconds then lightly scramble and add sesame oil
Add your rice, use a ladle or spatula to separate the rice into smaller pieces
Add the remaining seasonings and fry for 3-5 minutes depending on how high your heat is, mixing well so every grain has been incorporated
Serve with spring onions, crispy shallots and chilli oil
