Mash 1 block of feta in a bowl with a fork and add a large glug of extra virgin olive oil (roughly 4-5 Tbsp), a tbsp of white, red wine or ACV vinegar and the juice from 1 lemon.
Add the cucumber, red onion, baby plum tomatoes, green pepper, olives and a large handful of chopped dill. Add 1 block of feta cut into cubes or just roughly crumble into large chunks. Add a good glug or about 5tbsp of good quality extra virgin olive oil and mix everything together.
