  1. Finely grate 12 fresh tomatoes into a large bowl, you want to end up with about 2 ½ cups (560 grams) of grated tomato, then mix together and set aside

  2. Finely chop ½ green bell pepper, finely dice ½ onion and roughly chop 5 cloves of garlic

  3. Heat a large fry pan with a medium heat and add in 2 tbsp extra virgin olive oil

  4. After 2 minutes, add in the onions, green bell pepper and garlic, mix together with the olive oil, after 5 minutes and the onion is translucent, add in ½ tsp sweet smoked paprika and 1 tbsp sherry vinegar, give it a quick mix, then add in the grated tomato, season with sea salt, black pepper and a kiss of granulated sugar, mix together and simmer

  5. After 16 to 18 minutes and the tomato sauce has thickened up, add in 2 tbsp finely chopped parsley, turn off the heat, mix together and remove the pan from the stove top, serve warm or even chilled, enjoy!
