Season chicken thighs with 2-3 tbsp Cajun seasoning, paprika, and salt
Cook the seasoned chicken thighs and reserve the oil left from cooking
In a pan, melt 3 tbsp unsalted butter and add 4 minced garlic cloves
Add Cajun seasoning and onion powder to the butter and garlic
Pour in 2 cups heavy cream and stir until combined to make the sauce
Cook rice in the reserved oil from the chicken with ½ cup white onion, 3 minced garlic cloves, and 3 tbsp Cajun seasoning
Combine the creamy sauce with the chicken and rice
Check for flavor and adjust seasonings to taste
