In the crockpot, combine coconut milk, red curry paste, bell pepper, onion, garlic, and ginger.
Stir in shrimp and fish sauce.
Cover and cook on low for 1-2 hours or until shrimp are cooked through.
Stir in lime juice and cilantro.
Serve over cooked rice.
