Flatbread Met Pulled Aubergine, Tahin & Feta
  1. Preheat the oven to 220 degrees. Place the aubergines on a baking sheet and prick them with a fork. Roast them for 30-35 minutes in the oven.

  2. Put the roasted aubergines in a bowl and cover with a lid or plate. Let them steam for 10 minutes, then cool them down with cold water. Peel off the skin and remove the flesh with a fork.

  3. Heat some olive oil in a pan and add the pulled aubergine and garlic. Fry for 2-3 minutes on high heat, then add the spices. Fry for another 3 minutes and finally add the tomato paste, maple syrup, and fresh herbs. Fry for a few more minutes and season with pepper and salt.

  4. Make the yogurt sauce by mixing all the ingredients.

  5. Serve the flatbreads with the yogurt sauce, pulled aubergine, extra tahini drizzle, feta, dill, and pomegranate seeds.
