🛒 Ingredients
Build the flavor base
Heat olive oil over medium-low. Add onion, garlic, rosemary, chili flakes, and a pinch of salt.
Cook slowly for 8–10 minutes until soft, sweet, and fragrant (not browned).
Simmer the chickpeas
Add chickpeas + a splash of their liquid. Pour in broth to mostly cover.
Simmer 10–15 minutes until everything is very tender and infused.
Cook pasta
Boil pasta in salted water. Reserve 1 cup pasta water, then drain.
Blend the sauce
Remove rosemary stem. Blend chickpea mixture until completely smooth and creamy.
Bring it together
Return sauce to pan over low heat. Stir in Parmesan.
Add cooked pasta and a splash of pasta water until glossy and silky.
Finish
