Heat oven to 425°F.

Mix gochujang, soy sauce, Spicy Seasoned Salt, honey, and ginger to make the sauce.
Add sauce to cauliflower, stir, and cook for 2 minutes.
Stir in whipped tofu, top with mozzarella, scallions, and remaining cheese.
Bake for 15 minutes, then broil for 1-2 minutes until cheese is browned.
Top with crispy fried onions and serve with crackers or flatbread.
