Garlic Lemon Chicken Bowl
  1. Heat a pan over medium heat and add 2-3 tbsp vegetable broth or water

  2. Add the ground chicken and cook for 5-6 minutes, breaking it apart with a spatula, until mostly cooked through

  3. Stir in the garlic and shredded carrots and cook for 2-3 minutes

  4. Add the cauliflower rice and cook for another 3-4 minutes, stirring occasionally, until heated through and lightly tender

  5. Season with sea salt, black pepper, and dried thyme

  6. Transfer everything to a bowl and drizzle with lemon juice

  7. Top with scallions and cubed avocado or a drizzle of extra virgin olive oil
