Heat a pan over medium heat and add 2-3 tbsp vegetable broth or water
Add the ground chicken and cook for 5-6 minutes, breaking it apart with a spatula, until mostly cooked through
Stir in the garlic and shredded carrots and cook for 2-3 minutes
Add the cauliflower rice and cook for another 3-4 minutes, stirring occasionally, until heated through and lightly tender
Season with sea salt, black pepper, and dried thyme
Transfer everything to a bowl and drizzle with lemon juice
Top with scallions and cubed avocado or a drizzle of extra virgin olive oil
