Creamy Sausage Tortellini Soup
  1. Melt 2 tablespoons butter in a large pot over medium heat.

  2. Add diced onion, celery, carrots, and black pepper. Cook 7–8 minutes until softened.

  3. Add Italian sausage and cook until browned, breaking it up as it cooks.

  4. Stir in minced garlic, garlic powder, onion powder, herbs de Provence, and red pepper flakes. Cook 1 minute.

  5. Add remaining tablespoon butter. Sprinkle in flour and cook 2 minutes while stirring.

  6. Slowly stir in chicken broth and heavy cream. Bring to a gentle boil.

  7. Add tortellini and chopped spinach. Simmer until tortellini is tender, about 3–5 minutes.

  8. Reduce heat to low and stir in Parmesan cheese. Simmer a few minutes until the soup thickens slightly.

  9. Taste and adjust seasoning if needed. Serve hot with desired garnishes.
